Lessons in Baking

I decided to try baking Gluten Free Vegan Dark Chocolate Chocolate Chip cookies from scratch today. I learned Coconut Flour doesn’t spread so the first batch are shaped like nuggets but taste good. But I think they may be a bit crumpley and dry.

So, I remixed the dough with more Coconut Milk, Xanthum Gum and I shaped the cookies into perfectly shaped cookies. The perfectionist in me couldn’t stop myself.

The final cookies are a mixture of round and nugget shaped. I still think they are a bit dry and not sure I like baking with Coconut Flour. But, a least they have a lot of chips in them so you get a big pop of chocolate with every bit.

Gluten Free Chocolate Dipped Pretzel Sticks

I made these on Sunday.  They are homemade Chocolate dipped Gluten Free Pretzel Sticks made with Glutino GF Pretzel Sticks & Enjoy Life Chocolate Chips. They are FREE of Dairy, Eggs, Nuts, Wheat & Gluten.

They are easy, delicious and perfect to take to parties. It only took me about 20 minutes to make them.

Ingredients:

Glutino Gluten Free Pretzel Sticks – These pretzel sticks are also Dairy Free, Egg Free, Nut Free but do have Soy in them.  There’s about 120 calories and 33 pretzels in a serving.

Enjoy Life Chocolate Chips – Gluten Free, Soy free, Diary free, Egg free & Nut free.  There’s about 75 calories in a serving. A serving is a tablespoon full of chips. There’s about 19 servings in a bag. I only used 1/4 of the bag.

I melted the Enjoy Life Chocolate Chips for about three minutes in the microwave and stirred.

I dipped the pretzel sticks into the chocolate and laid them out on a cookie sheet. Once the sheet was full I put it in the refrigerator for about 1/2 hour to harden the chocolate. That easy.

I think I am going to try make some haystacks with dried cranberries and pretzels and next time. 

No one would ever know they are allergy friendly:-)
